DAD’s Famous SPUDNUTS!


3 cups whole milk

1 and a half cups boiled mashed potatoes

3 eggs

1 and one half tablespoon yeast

1 tablespoon lemon juice

one and one half teaspoon salt

1 cup sugar

3/4th cup shortening

1/2 cup warm water to activate yeast
1 1/2 TBSP Yeast


heat 2 cups milk, salt , sugar, shortening on the stove till the shortening melts.  Remove from heat

and let cool.  Add the other cup of cold milk along with the mashed potatoes, this will help cool the 

mixture down to warm.  Want to be careful its not to hot when you add to the  eggs as not to cook the eggs.

slowly add the mixture to the eggs along with flour and mix.  Add more flour and the rest of the 

milk mixture and mix till you get a slightly sticky dough.  Mix the yeast with the 1/2 cup warm water

to activate the yeast.  Add to the slightly sticky dough along with additional flour and mix till you end

up with a slightly sticky dough.  Let rise once, push down and let rise one more time then roll out

donuts on a nonstick plastic matt approx 1/half inch thick.  Let rise again approx 2-3 hrs or until

they have doubled in size.  Fry in a good quality vegatable oil, canola, at approx 360 degrees

until light brown.  Add glazing while still hot.


Glazing consists of  one 2lb pound confection sugar one cube butter, pinch of salt, 1 teaspoon vanilla

melt butter, add sugar, salt, vanilla and beat to a smooth texture.  add whole milk to desired

consistency.  Enjoy!

Oreo Brownie Ice Cream Cake

My youngest brother Brandon had been craving an
Ice Cream Cake so I decided the perfect time to
make him one would be for his 19th Birthday!!
I had never made an ice cream cake, so this was
my first EXPERIMENT and I chose Brownies because
they are moist!! It turned out SO YUMMY & RICH!!
These are my layers...
Oreo cookie crust (Oreos, butter, sugar)
Cookies & cream ice cream
Brownie
Hot Fudge
Cookies & cream ice cream
Brownie
Fresh whipped cream
I also decorated the cake with chocolate frosting and Oreos

Raspberry "Cheesecake" Cake

This is the cake my mom makes me for
my BIRTHDAY every year!!

CAKE
1 white cake mix
Bake per instructions in large glass baking dish. Cool.

CREAMY TOPPING
1 pint whipping cream
8 oz cream cheese, softened
2 c powdered sugar
1 t pure vanilla extract
Whip all ingredients together and frost cake.

RASPBERRY SAUCE
1 package raspberry Deserta
2 c water
1 package frozen raspberries
Mix in sauce pan and chill in fridge until ready to eat!

Heavenly Brownie Dessert!

I found these BEAUTIFUL raspberries at the store,
and immediately knew I needed to make a
HEAVENLY DESSERT with them!! So I opted to
make a layered Brownie dessert!!

Chocolate Pudding- Homemade or from a box!
FRESH heavy whipped cream
FRESH raspberries
It tasted UTTERLY DIVINE!!
My daughter does not like her foods to touch, so she opted
for the "deconstructed" brownie dessert!! SO YUMMY!!

Lemon Cheesecake



Lemon Cheesecake

CRUST
5 ounces Nabisco's Barnum's Animal Crackers
3 tablespoons sugar
4 tablespoons unsalted butter, melted and kept warm
FILLING
1 1/4 cups (8 3/4 oz.) sugar
1 tablespoon grated zest and 1/4 cup juice from 1-2 lemons
1 1/2 pounds (3 8-oz. packages) cream cheese, cut into 1 inch chunks, at room temperature
4 large eggs, at room temperature
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup heavy cream

LEMON CURD
1/3 cup juice (from about 2 lemons)
2 large eggs plus 1 large egg yolk
1/2 cup (3 1/2 oz.) sugar
2 tablespoons cold butter, cut into 1/2-inch cubes
1 tablespoon heavy cream
1/4 teaspoon vanilla extract
pinch of salt

FOR THE CRUST
Adjust an oven rack to the lower-middle position and preheat the oven to 325F. In a food processor, process the animal crackers until you have fine crumbs. You should have about 1 cup. Add in the sugar and pulse. In a steady stream, add the butter while pulsing, about 10 1-second pulses. Transfer the crumb mixture to a 9-inch springform pan and press evenly into the bottom. Bake until fragrant and golden brown. The instructions say 15 to 18 minutes, but mine was done at about 12 minutes, so keep an eye on it. Cool on a wire rack to room temperature. When cool, wrap the pan with 2 18-inch square pieces of foil. Set the pan in a roasting pan.

FOR THE FILLING
Process 1/4 cup of the sugar and the lemon zest in a food processor until the zest is broken down and the sugar turns yellow. Transfer to a small bowl and mix in the rest of the sugar.

In a bow of a stand mixer, beat the cream cheese to break it up and soften it slightly, about 5 seconds. With the machine is running, add the sugar mixture in a slow stream; increase the speed to medium and beat until combined, creamy and smooth - about 3 minutes. Scrape down the sides of the bowl as needed. Reduce the speed to medium low and add the eggs, 2 at a time. Beat until incorporated, about 30 seconds. Scrape the bowl before each addition. Add the lemon juice, vanilla and salt and mix to combine. Add the cream and mix until incorporated, about another 5 seconds. Give the bowl a final scrape and pour the mixture into the prepared springform pan. Fill the roasting pan with enough water to make it about halfway up the sides of the pan. Bake until the center jiggles slightly, the sides start to puff, and the surface is no longer shiny, about 55 to 60 minutes. The center should read about 150 degrees F. Turn off the oven and prop the door of the oven open with a potholder or wooden spoon. Allow the cake to cool in the water bath in the oven for about an hour. Transfer the springform pan to a wire rack and run a small paring knife around the edges of the pan to loosen the cake. Let it sit to room temperature for 2 hours.

FOR THE CURD
While the cheesecake is baking, heat the lemon juice in a small non-reactive pan on medium heat until hot, but not boiling. Whisk the eggs in a small bowl, then gradually whisk in the sugar. Whisking constantly, slowly pour the hot lemon juice into the egg/sugar mixture, then return the mixture to the saucepan and continue to heat over medium heat, stirring constantly until the mixture reaches 170 F and is thick enough to cling to the spoon, about 3 minutes. Immediately remove the pan from the heat and add in the cold butter and mix until incorporated. Stir in the cream, vanilla and salt, then pour through a strainer into a small nonreactive bowl. Cover the surface of the curd directly with plastic wrap and refrigerate until needed.

TO ASSEMBLE
When the cheesecake is cook, top it with the lemon curd while still in the springform pan. Cover tightly with plastic wrap and refrigerate for at least 5 hours, but 24 hours is better. To serve, remove the sides of the springform pan and cut into wedges

Yummy Pumpkin Cake with Cream Cheese Frosting

2 c white granulated sugar
2 c flour
1 t baking powder
2 t baking soda
2 t cinnamon
2 t nutmeg
1 t salt
4 eggs
1 1/2 c oil
1 29 oz can pumpkin

Preheat oven to 350 degrees F. Mix together dry ingredients and beat slowly. Add wet ingredients and beat together until mixed well. Place in a well-greased 9x13 pan and bake for 50 minutes. Let cool and add cream cheese frosting.

1 8 oz package cream cheese
1/4 c butter
2 t milk
1 t vanilla
4 c powdered sugar

Let butter and cream cheese come to room temperature. Beat cream cheese, butter, milk & vanilla on low. Add powdered sugar on low slowly until smooth.

White Layer Cake with Lemon Curd Filling

INGREDIENTS
3 cups cake flour (not self-rising)
2 tsp baking powder
1 tsp salt
1 ½ cups (3 sticks) unsalted butter, room temperature
2 ¼ cups sugar
½ tsp pure vanilla extract
1 cup milk
8 large egg whites
Seven-Minute Frosting (see recipe in book)
1 cup Lemon Curd (see recipe in book)

INSTRUCTIONS
Preheat oven to 350°. Butter two 9-by-2-inch round cake pans; line bottoms with parchment paper rounds. Butter parchment, and dust with flour, tapping out excess; set aside. Into a medium bowl, sift together flour, baking powder, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and 2 cups sugar until light and fluffy, 3 to 4 minutes, scraping down sides of bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in three parts, alternating with milk and beginning and ending with flour; beat until just combined. Transfer mixture to a large bowl; set aside. In the clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites on low speed until foamy. With mixer running, gradually add remaining 1/4 cup sugar; beat on high speed until stiff, glossy peaks form, about 4 minutes. Do not over beat. Gently fold a third of the egg-white mixture into the butter-flour mixture until combined. Gently fold in remaining whites. Divide batter evenly between prepared pans, smoothing with an offset spatula. Bake, rotating pans halfway through, until cakes are golden brown and a cake tester inserted in centers comes out clean, 30 to 35 minutes. Transfer pans to a wire rack to cool 20 minutes. Invert cakes onto rack; peel off parchment. Reinvert cakes, and let them cool completely, top sides up. Using a serrated knife, trim tops of cake layers to make level. Place one layer on a serving plate, cut side up. Using a pastry bag fitted with a coupler, pipe frosting around the perimeter. This dam will prevent the lemon curd filling from seeping out. Fill cake with lemon curd. Place other cake layer on top, cut side down. Spread entire cake with frosting, swirling to cover. Makes 2 9-inch cakes.

Picnic Cake

INGREDIENTS
1 cup dates
1 ½ cups water
1 tsp baking soda
1 cup sugar
¾ cup shortening
2 eggs
1 tsp vanilla
1tsp baking powder
1 ¾ cups flour
1 tsp cinnamon
¾ cup brown sugar
2/3 package of chocolate chips
1 cup chopped nuts

INSTRUCTIONS
In a small pan boil dates in 1 ½ cups water then add baking soda and set aside. In a large bowl mix sugar, shortening, eggs, and vanilla together. In a separate bowl sift together baking powder, flour and cinnamon. Mix with sugar mixture and then add the date mix. Pour in a 9 x 13 cake pan. Top with brown sugar, chocolate chips and chopped nuts. Bake at 350 degrees for 30-40 minutes.

Mom's Birthday Applesauce Cake

INGREDIENTS
2 cups warm applesauce
2 tsp baking soda
½ cup shortening
2 cups chopped nuts
2 ½ cups flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 tsp salt

INSTRUCTIONS
Preheat oven to 350 degrees. Warm applesauce in microwave. Mix together with rest of ingredients. Bake in floured bread pans for 1 hour at 350.
